Which head gasket?

Replacement head gaskets seem to come in several thicknesses and variable quality. How do I know which thickness I need? Can you recommend a good brand?
 
Do they really come in different thicknesses or is it just the brand difference.

I just picked mine up from a local auto parts shop in the complete kit of gaskets. If it fits it will work.
 
OK I haven't skimmed the head, so I'll use the thinner one (1.2mm) to maintain the original compression ratio.

I got one as part of a pack by Payen Curty but it looks just like a piece of cardboard, not like the original one which looks like rubber with metal and extra seals around the oilways etc. I'm not convinced of the quality of the new one...
 
I always use the thickest gasket available, lowers the compressions slightly and has more give in to accept the older tolerances.
